Oatmeal Pie: The “Healthy Crepe” I Eat for Breakfast

 

The oatmeal pie is one of my favourite options for breakfast. I go for it when I know that I have a hectic day ahead and will eventually have my main meal late as it keeps me full for many hours. Oats, which is the main ingredient of the oatmeal pie, is a food with a high satiety index, affording a feeling of fullness for a longer period of time.

 

Healthy and flexible meal

Oatmeal pie is a super healthy option, as it is rich in beta-glucans, fibre that controls blood sugar and cholesterol levels, while it also increases good bacteria in the gut. In addition, oats are rich in important minerals for our organism, such as manganese, phosphorus and magnesium that contribute to the proper functioning of cells, bones, nervous and muscular system, but also to the more effective metabolism of fat.

It has a neutral taste and this makes it particularly versatile, as it can be combined with both savoury and sweet toppings. I tend to top my oatmeal pie with a little honey, cinnamon and grated walnuts, while for the children I often use raw cocoa and banana or other fruits.

 

Ingredients

40 g. (about 5 tbsp) oat flakes

80 ml almond milk (or other milk)

1 egg white

 

Directions

In a small bowl, add all the ingredients and mix until a homogeneous mixture is formed. Cover the bowl and wait 10 minutes for the mixture to thicken. In a 10 cm non-stick pan, add ½ teaspoon of olive oil and heat. Pour the batter into the pan and spread it until the bottom is evenly covered. Bake the oatmeal pie on low heat so that it does not catch on the bottom of the pan and there sufficient time to cook well in the inside. Turn it over with a spatula, so that it is cooked properly on both sides.

 

Tips:

  • Instead of almond milk, you can use any other milk you want or even water.
  • Avoid adding the egg yolk to the mixture, because it will give the oatmeal pie an omelettey taste.
  • To save time in the morning, you can prepare the mixture from the previous night and let it acquire a porridge-like texture in the refrigerator. Oats take about 10 minutes to absorb the liquid ingredients of the recipe.
